Mango Spinach Smoothie with ginger, goat yogurt and almond milk

Hello soon-to-be green smoothie lover! This was so tasty, I had to share! It’s a super simple and delicious mango spinach smoothie recipe that only has five ingredients and can be made in a matter of minutes. Its amazing color and fresh ripe mango gives it a tropical tasting fruity flavor that is so tasty you’ll forget it’s a green.

Of course, the spinach gives this smoothie its gorgeous bright green color, but I promise you can’t taste it. I can’t taste it! Okay, as a long-time fan of green smoothies, I am definitely not one to shy away from even the greenest of smoothies, but I did the Schwabe test and kid test on this one. There was no need to add a banana or a whole whack of honey. It was delicious.

What really put it over the top was the passionfruit topping. Insanely addictive. I L-O-V-E passionfruit. Did I share? No way. So even without the ultra yummy topping, this smoothie passed the beginner green smoothie test.

So what are those 5 magical ingredients? I used unsweetened almond milk, but any nut/seed milk will do — use your favorite. I also used whole goat milk yogurt, which has a soft texture and slightly sweet, salty flavor. Sheep milk yogurt is also a great choice, since it’s mild and still rich and creamy. Then of course, there is Greek yogurt, another favorite of mine. I threw in a couple very generous sized handfuls of fresh, locally grown, tender spring spinach picked up at the farmers market — I love that smoothies make it so easy to an extra portion of greens in! And it couldn’t be without a little ginger to give the metabolism a big boost and mango because it simply tastes great! So if you are going to give green smoothies a chance, then try this mango green smoothie!

Mango Spinach Smoothie with ginger, goat yogurt and almond milk

Mango Spinach Smoothie

Yields 2 servings. Use organic ingredients when possible.

INGREDIENTS:
2 generous handfuls fresh spinach
1 ripe mango, peeled and chopped
1 x 125 g container natural sheep or goat milk yogurt
2cm piece ginger, peeled
3/4 cup unsweetened almond milk (175 ml)

GARNISH (optional):
passion fruit
chia seeds

METHOD:
1. Combine all ingredients in a blender and puree until smooth. Pour into glasses and serve.

2. Drink and feel awesome!
