Measurement Guide: Cups to Grams

When living in Europe you most always need a tool to help you convert cups to grams. I have an American standard measuring cup that I have managed to hang on to for the last 10 or so years. I would die if it ever broke. So,  I finally “invested” in a scale. So if you are used to working with American recipes…here’s some help.

I think all of my recipes provide cup measures and grams, but here are some guidelines based on my own experiences:

LiquidsIngredients for baking in different bowls
1 cup = 240 ml (US), 250 ml (EU)
1/2 cup = 120 ml (US), 125 ml (EU)
1/3 cup = 80 ml
1/4 cup = 60 ml = 4 tablespoons
1 tablespoon = 15 ml = 3 teaspoons
1 teaspoon = 5 ml
1 fluid ounce = 30 ml
1 US quart = 0.946 liter ~=1 liter

Weight
1 ounce = 28 grams
1 pound = 16 ounces = 450 grams

Temperature
100 Celsius (C) = 212 Fahrenheit (F)
120 C = 250 F
140 C = 275 F
150 C = 300 F
160 C = 320 F
170 C = 325 F
180 C = 350 F
190 C = 375 F
200 C = 400 F
210 C = 410 F

Volume-to-Weight Conversions
Weighing is preferable, especially in baking. It’s much more consistent. The number of grams it takes to equal one cup differs depending on the ingredient, how its packed, it’s density, the moisture content, or the ingredient itself. But here are some general guidelines:

Dairy
Butter: 1/2 cup = 1 stick = 4 ounces = 113 grams
Butter: 1 tablespoon = 15 grams
Cream: 1 cup = 240 grams
Crème fraîche: 1 cup = 240 grams
Hard cheese, finely grated: 1 cup = 100 grams
Yogurt, natural, Greek-style: 1 cup = 250 grams

Nuts
Almonds, shelled, whole, blanched: 1 cup = 125 grams
Almonds, sliced: 1 cup = 70 grams
Almonds, ground: 1 cup = 100 grams
Cashews: 1 cup = 130 grams
Hazelnuts: 1 cup = 120 grams
Nut butter: 1 cup = 240 grams
Pistachios: 1 cup = 125 grams
Poppy seeds: 1 cup = 145 grams
Walnuts: 1 cup = 100 grams

Baking
Cocoa powder: 1 cup = 120 grams
Honey: 1 cup = 300 grams
Sugar, brown: 1 cup (packed) = 180 grams
Sugar, confectioner’s: 1 cup = 130 grams
Sugar, granulated cane: 1 cup = 200 grams

Flour, grains, etc.
Bulgur: 1 cup = 190 grams
Chickpeas, dried: 1 cup = 190 grams (= 475 grams cooked)
Cornmeal: 1 cup = 160 grams
Couscous, uncooked: 1 cup = 200 grams
Dried beans: 1 cup = 180 grams
Dried beluga lentils: 1 cup = 230 grams
Flour, all-purpose or whole wheat: 1 cup = 120 grams
Polenta: 1 cup = 160 grams
Quinoa: 1 cup = 200 grams
Rice, basmati: 1 cup = 180 grams
Rice, short-grain: 1 cup = 200 grams
Rolled oats: 1 cup = 100 grams

Greens & Herbs
Baby spinach leaves: 1 cup (packed) = 30 grams
Basil: 1 cup (packed) = 20 grams
Green peas, shelled: 1 cup = 145 grams
Lambs lettuce (mâche): 1 cup (packed) = 20 grams
Parsley: 1 cup (packed) = 25 grams
Rocket: 1 cup (packed) = 25 grams
Young salad greens: 1 cup (packed) = 20 grams

Fruit
Blueberries: 1 cup = 190 grams
Raspberries: 1 cup = 125 grams
Strawberries: 1 cup (sliced) = 125 grams

Other
Capers: 1 cup = 120 grams
Olives: 1 cup = 180 grams
Tomato paste: 3/4 cup = 6oz = 170 gram can
