Avocado 3-Ways

Avocados. Rather supercados, are just the best thing ever! Not only is this tasty green fruit (yes fruit….a berry to be exact) super versatile, it’s also fabulously healthy and a great anti-aging tool for your skin. With all its nutrients, healthy fat and vitamins it feeds your skin from the inside and out. Avocados contain a secret ingredient: Vitamin E! More reasons to find ways to include them in your diet!

I could literally come up with dozens of ways to put avocado to use, but here are three really easy ways to create a quick and tasty side dish or starter. Sorry avocado haters, this isn’t for you, but guess what? You can still put avocados to use by creating a skin mask from mashed up avocado — it’s deeply hydrating and nourishing for even sensitive skin types — you’re welcome. :)

Quick Avocado Starter

Serves 2-4

INGREDIENTS:
2 ripe but firm avocados, halved and stones removed
sea salt and freshly ground pepper, to taste
splash of good quality balsamic vinegar
splash of extra-virgin olive oil

METHOD:
1. Place the avocado halves in individual serving bowls.

2. Sprinkle with salt and pepper, then drizzle with balsamic vinegar and olive oil. All done!

Avocado and Pink Grapefruit Salad

Serves 2-4

INGREDIENTS:
For the salad:
1 large pink grapefruit, peeled and sectioned
2 ripe but firm avocados, halved, stones removed, peeled, chopped
handful pomegranate seeds, garnish
handful of mixed greens, such as baby beet leaves, arugula and lambs lettuce (optional)

For the dressing:
2 teaspoons mild, aromatic vinegar
1 teaspoon honey
1 small shallot, finely chopped
sea salt and freshly ground pepper, to taste

METHOD:
1. In a small bowl, combine the vinegar, honey, shallot, salt and pepper.

2. Arrange the grapefruit on two serving plates, top with the avocado and pour the dressing over. Scatter with pomegranate seeds and mixed greens, if using.

AvocadoCelerySalad-WEB

Avocado and Celery Salad

Serves 2-4

INGREDIENTS:
4 stalks of celery, finely sliced
2 ripe but firm avocados, halved, stones removed, peeled, chopped
1 small red onion, chopped
juice of 1 small organic lemon
1 tablespoon extra-virgin olive oil
sea salt and freshly ground pepper, to taste

METHOD:
1. Place the celery and the avocado in a serving bowl. Add the lemon juice and olive oil, season with salt and pepper and gently toss to combine.
